This quick and easy sweet potato casserole features a generous pecan streusel topping and requires no boiling or mashing. It’s perfect for weeknights or holidays and comes together in about 45 minutes.

  • 3 large sweet potatoes (about 2 pounds), peeled and sliced into 1/4-inch rounds (or 2 cans of canned sweet potatoes, drained)
  • 1/4 cup unsalted butter, melted
  • 1/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup pecans, chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cut into small cubes
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. If using fresh sweet potatoes, peel and slice into 1/4-inch rounds. If using canned, drain and slice into similar-sized pieces.
  3. In a small bowl, whisk together melted butter, brown sugar, vanilla extract, salt, cinnamon, and nutmeg.
  4. Arrange half of the sweet potato slices in the prepared baking dish. Drizzle with half of the butter mixture. Add remaining sweet potatoes and drizzle with the rest of the butter mixture. Toss gently to coat.
  5. Cover the dish tightly with aluminum foil and bake for 25 minutes.
  6. While the sweet potatoes bake, make the streusel: In a medium bowl, combine flour, brown sugar, cinnamon, and salt. Add cold butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs. Stir in chopped pecans.
  7. After 25 minutes, remove the foil. The sweet potatoes should be fork-tender. Sprinkle the pecan streusel evenly over the top.
  8. Return the dish to the oven, uncovered, and bake for another 15-20 minutes, until the streusel is golden brown and the filling is bubbly around the edges.
  9. Let the casserole rest for 5-10 minutes before serving.

Notes

For extra crunch, toast the pecans in a dry skillet for 2-3 minutes before using. The casserole can be assembled (without streusel) up to 24 hours in advance. Add streusel just before baking. For a vegan version, use coconut oil and maple syrup. For gluten-free, use a 1:1 gluten-free flour blend.
