  • 2 cups rolled oats (use certified gluten-free if needed)
  • 1 cup creamy peanut butter (natural, no-stir variety)
  • 1/2 cup honey (local honey adds nice floral notes)
  • 1/2 cup vanilla protein powder (optional but recommended)
  • 2 tablespoons ground flaxseed
  • 1/3 cup mini chocolate chips (semi-sweet or dark)
  • 1/4 teaspoon sea salt

Instructions

  1. Combine the dry ingredients. In your large mixing bowl, add the 2 cups of rolled oats, 1/2 cup of vanilla protein powder, 2 tablespoons of ground flaxseed, and 1/4 teaspoon of sea salt. Stir them together with your wooden spoon until everything is evenly distributed.
  2. Add the wet ingredients. Pour in 1 cup of creamy peanut butter and 1/2 cup of honey. At this point, the mixture will look dry and a little sad. Don’t panic. Just start stirring. It takes a minute or two for everything to come together. Use a folding motion, scraping the bottom of the bowl to incorporate all the dry bits.
  3. Mix in the chocolate chips. Once the base mixture is uniform and holds together when pressed between your fingers, fold in the 1/3 cup of mini chocolate chips. Make sure they’re evenly distributed so every ball gets a few chocolatey bits.
  4. Chill the mixture. Cover the bowl with plastic wrap or a clean kitchen towel and pop it in the fridge for about 20 minutes. This step is crucial. The mixture needs to firm up so the balls hold their shape.
  5. Roll into balls. After the mixture has chilled, line a baking sheet or large plate with parchment paper. Using your hands or a small cookie scoop, portion out about 1 tablespoon of mixture and roll it between your palms into a smooth ball. Place each ball on the prepared sheet. You should get about 20 to 24 balls.
  6. Chill again. Place the tray of rolled balls in the fridge for at least 30 minutes. This final chill sets them completely.
  7. Store properly. Transfer the chilled balls to an airtight container. Keep them in the refrigerator for up to two weeks, or in the freezer for up to three months.

Notes

Warm your honey and peanut butter slightly for easier mixing. Don’t overmix to keep the oats intact. Wet your hands slightly before rolling to prevent sticking. Chill the mixture before rolling for best results. Taste test before rolling the entire batch. Use a cookie scoop for uniform size.
