Instructions

  1. Preheat your oven to 400°F (200°C). Place your baking dish in the oven while it preheats.
  2. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, rosemary, salt, and pepper.
  3. Pat each chicken breast dry with paper towels. If uneven, pound to an even 1-inch thickness.
  4. Place the chicken in a shallow dish or zip-top bag. Pour the marinade over the chicken, turning to coat. Let it sit at room temperature for 15 minutes.
