This creamy, crispy-topped green bean casserole is made from scratch with a rich mushroom sauce and a crunchy gluten-free panko topping. It’s a crowd-pleasing Thanksgiving side dish that even gluten-eaters love.

Ingredients

Scale
  • 1 ½ pounds fresh green beans, trimmed and cut into 2-inch pieces
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, sliced thinly
  • 1 small yellow onion, finely diced (about ¾ cup)
  • 3 cloves garlic, minced
  • 3 tablespoons gluten-free all-purpose flour blend (e.g., Bob’s Red Mill 1-to-1 Baking Flour)
  • 1 ½ cups chicken or vegetable broth, warmed
  • 1 cup heavy cream (or full-fat coconut milk for dairy-free)
  • ½ teaspoon dried thyme
  • ¼ teaspoon nutmeg, freshly grated if possible
  • Salt and pepper to taste
  • 1 cup gluten-free panko breadcrumbs (e.g., Aleia’s)
  • 2 tablespoons unsalted butter, melted
  • ¼ cup grated Parmesan cheese (optional; use dairy-free alternative if needed)
  • ¼ teaspoon garlic powder
  • Pinch of paprika (smoked paprika adds depth)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Blanch the green beans: Bring a large pot of salted water to a rolling boil. Add the trimmed green beans and cook for exactly 3 minutes. Drain immediately and transfer to a bowl of ice water to stop the cooking. Let sit for 2 minutes, then drain again and pat dry with a clean kitchen towel. Set aside.
  3. Start the sauce: In a large skillet, melt 3 tablespoons of butter over medium heat. Add the sliced mushrooms and cook for 5-6 minutes, stirring occasionally, until they release their liquid and start to turn golden brown. Add the diced onion and cook for another 3 minutes until translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Make the roux: Sprinkle the gluten-free flour over the mushroom mixture and stir constantly for 1-2 minutes. The mixture will look pasty and thick.
  5. Add the liquid: Slowly pour in the warm broth while whisking continuously. Keep whisking until the sauce is smooth. Bring to a gentle simmer, then reduce heat to low. Stir in the heavy cream, thyme, nutmeg, and a generous pinch of salt and pepper. Let simmer for 3-4 minutes, stirring occasionally, until thickened to a gravy-like consistency. Taste and adjust salt.
  6. Combine everything: Add the blanched green beans to the sauce and stir gently until every bean is coated. Pour the mixture into a greased 9×13-inch baking dish and spread into an even layer.
  7. Make the topping: In a small bowl, combine the gluten-free panko, melted butter, Parmesan cheese (if using), garlic powder, and paprika. Stir with a fork until the breadcrumbs are evenly coated. Sprinkle this mixture over the casserole in an even layer.
  8. Bake: Place the dish on the middle rack of the preheated oven and bake for 20-25 minutes, until the topping is golden brown and the sauce is bubbly around the edges. If the topping is browning too quickly, tent loosely with foil for the last 5 minutes.
  9. Rest before serving: Let the casserole sit for 5 minutes after coming out of the oven to allow the sauce to set.

Notes

For extra-crunchy topping, toast panko in a dry skillet for 2-3 minutes before mixing with butter. To make ahead, assemble casserole (without topping) up to 24 hours in advance; add topping and bake, adding about 10 minutes to baking time. For dairy-free, use vegan butter and full-fat coconut cream instead of heavy cream, and nutritional yeast instead of Parmesan.
