Best Easy Cranberry Brie Bites Recipe

Crispy, creamy, tart, and sweet, these cranberry brie bites are the perfect poppable appetizer. Made with just a few simple ingredients, they come together in about 20 minutes and are a guaranteed crowd-pleaser for holidays or any occasion.

  • 1 sheet frozen puff pastry, thawed
  • 4 to 5 ounces brie cheese, rind removed, cut into Β½-inch cubes
  • β…“ cup whole berry cranberry sauce
  • 2 tablespoons chopped pecans (optional)
  • 1 tablespoon fresh rosemary or thyme, finely chopped (optional)
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Place a rack in the center of the oven. Spray your mini muffin tin generously with baking spray.
  2. Lightly flour your work surface. Unfold the thawed puff pastry sheet and roll it out just slightly, to about a 10×10 inch square. Using a sharp knife or pizza cutter, cut the pastry into 24 equal squares, each about 2 inches wide.
  3. Gently press each square into a mini muffin cup, making sure the corners stick up a little.
  4. Place one cube of brie (about Β½ inch) into each pastry cup.
  5. Using a small cookie scoop or a teaspoon, add about Β½ teaspoon of cranberry sauce on top of each brie cube.
  6. If using, sprinkle a tiny pinch of pecans or herbs over each bite.
  7. Lightly beat the egg with a splash of water. Using a pastry brush, gently brush the exposed edges of the pastry.
  8. Place the muffin tin in the preheated oven and bake for 12 to 15 minutes, until the pastry is puffed and golden brown and the brie is bubbly and soft.
  9. Let the bites cool in the pan for 2 to 3 minutes. Then, use a small spoon or a butter knife to gently lift them out of the pan.
  10. Serve warm.

Notes

Don’t overfill the cups with cranberry sauce to avoid soggy pastry. Keep the pastry cold for best results; if your kitchen is warm, refrigerate the filled muffin tin for 10 minutes before baking. Start checking at 10 minutes if your oven runs hot. For make-ahead, assemble bites and refrigerate unbaked for up to 6 hours, then add 1-2 minutes to baking time. To freeze, assemble on a baking sheet, freeze solid, then transfer to a freezer bag; bake from frozen, adding 2-3 minutes.
