  • 1 can (8 oz) refrigerated crescent roll dough
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup packed brown sugar (light or dark)
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt (flaky sea salt preferred)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375Β°F (190Β°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Peel the apples, cut them in half from top to bottom, and scoop out the core. Cut each half into 4 wedges (8 wedges per apple).
  3. In a small bowl, combine 3/4 cup granulated sugar, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Stir until evenly mixed.
  4. Open the crescent roll can and separate the dough into 8 triangles. Roll each apple wedge in the cinnamon-sugar mixture until coated. Place a coated wedge at the wide end of a dough triangle, roll it up, and tuck the point under. Place seam-side down in the prepared dish. Repeat to make 16 dumplings.
  5. In a small saucepan, melt 1/2 cup butter over low heat. Stir in any remaining cinnamon-sugar mixture. Pour this buttery sugar mixture evenly over the dumplings.
  6. Bake for 25-30 minutes, until the dough is golden brown and puffed, and the apples are tender. If tops brown too quickly, tent with foil after 20 minutes.
  7. While the dumplings bake, make the caramel sauce: In the same saucepan, combine 1/2 cup brown sugar, 1/4 cup heavy cream, and 2 tablespoons butter. Cook over medium heat, whisking constantly, until butter melts and sugar dissolves (3-4 minutes). Let simmer for 1 minute until slightly thickened. Remove from heat and stir in 1/2 teaspoon vanilla and 1/4 teaspoon salt.
  8. Let the dumplings cool in the dish for 5 minutes. Drizzle with caramel sauce and serve warm, preferably with vanilla ice cream.

Notes

For best results, use firm apples like Granny Smith. If using softer apples, reduce baking time by 5 minutes. Assemble dumplings up to 4 hours ahead and refrigerate; add 5 minutes to bake time. Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze for up to 2 months.
