These champagne chocolate truffles are deceptively simple to make with just five ingredients and about 20 minutes of active time. They’re elegant enough for a champagne toast but casual enough for a cozy gathering with friends, perfect for impressing guests without stress.

  • 1/2 cup heavy cream
  • 1/4 cup champagne or sparkling wine, plus more for rolling
  • 1 tablespoon unsalted butter, softened
  • 1/2 cup cocoa powder, for rolling
  • Optional: 1/4 teaspoon sea salt flakes
  • Optional: 1/2 cup finely chopped nuts or shredded coconut, for coating

Instructions

  1. Finely chop the chocolate into small, uniform pieces about the size of peas. If your kitchen is warm, pop the chopped chocolate in the fridge for 10 minutes before proceeding.
  2. In a medium saucepan, combine the heavy cream and champagne. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling. You’ll see small bubbles forming around the edges. This takes about 3-4 minutes.
  3. Place the chopped chocolate in a large heatproof bowl. Pour the hot cream and champagne mixture over the chocolate, making sure all the chocolate is submerged. Let it sit undisturbed for 2 minutes.
  4. After 2 minutes, gently stir the mixture with a whisk or spatula, starting from the center and working outward, until the chocolate melts completely and creates a smooth, glossy ganache.
  5. Drop in the softened butter and stir until completely incorporated. If adding sea salt, stir it in now.
  6. Cover the bowl with plastic wrap, pressing it directly onto the surface of the ganache. Refrigerate for at least 2 hours, or until the ganache is firm enough to scoop. For best results, chill overnight.
  7. Line a baking sheet with parchment paper. Using a small cookie scoop or teaspoon, scoop portions of the chilled ganache and roll them between your palms to form smooth balls. Work quickly and wash your hands with cold water before rolling.
  8. Place the cocoa powder in a shallow dish. Roll each truffle in the cocoa powder until evenly coated. Shake off any excess. If using nuts or coconut, roll the truffles in those instead.
  9. Place the coated truffles back on the parchment-lined baking sheet and refrigerate for at least 30 minutes before serving.
  10. Arrange the truffles on a serving platter. Let them sit at room temperature for 5-10 minutes before serving for the best texture and flavor.

Notes

The 2-minute wait after pouring hot cream over chocolate is non-negotiable for smooth ganache. Use a dry brut champagne for best flavor. Truffles can be made up to 2 weeks ahead and stored in the refrigerator, or frozen for up to 3 months. For vegan version, use full-fat coconut cream and vegan dark chocolate.
