Crispy, spicy, and tangy buffalo cauliflower bites that are perfect for game day. This easy recipe uses a double-coating technique for maximum crunch and is served with a creamy ranch dressing.

  • ½ cup all-purpose flour
  • ½ cup milk (any kind works)
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅓ cup hot sauce (Frank’s RedHot is recommended)
  • 2 tablespoons melted butter (or vegan butter)
  • 1 teaspoon honey (or maple syrup for vegan)
  • ½ teaspoon Worcestershire sauce (use vegan Worcestershire if needed)
  • ½ cup sour cream (or Greek yogurt)
  • ¼ cup mayonnaise
  • 1 tablespoon milk
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash and dry the cauliflower head thoroughly. Cut it into bite-sized florets—about 1 to 1.5 inches each. Pat them dry with a clean kitchen towel.
  3. In a medium bowl, whisk together the flour, milk, egg, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
  4. Add the cauliflower florets to the batter and toss gently until every floret is evenly coated. Let them sit in the batter for about 2 minutes.
  5. Using your hands or tongs, place each battered floret on the prepared baking sheet in a single layer, leaving space between each one.
  6. Bake for 20 minutes: 10 minutes, then flip each floret and bake for another 10 minutes until golden brown and crispy.
  7. While the cauliflower bakes, combine the hot sauce, melted butter, honey, and Worcestershire sauce in a small saucepan over low heat. Whisk until smooth and warm. Do not let it boil.
  8. In a small bowl, whisk together the sour cream, mayonnaise, milk, dried dill, dried parsley, garlic powder, onion powder, salt, and pepper. Cover and refrigerate until ready to serve.
  9. Once the cauliflower is done, transfer it to a large bowl. Pour the warm buffalo sauce over the top and toss gently until every floret is coated.
  10. Optional: For extra-crispy bites, spread the sauced florets back on the baking sheet and bake for another 5 minutes.
  11. Serve immediately with the ranch dressing on the side. Garnish with chopped green onions or celery sticks if desired.

Notes

For extra crunch, double-coat the cauliflower: after the first bake, let cool for 5 minutes, dip back in batter, and bake for another 10 minutes before adding sauce. Add sauce right before serving to maintain crispiness. For air fryer: cook at 375°F for 12-15 minutes, shaking halfway, then toss with sauce and cook for 3 more minutes.
