Best Bacon-Wrapped Green Beans with Brown Sugar Glaze

Salty, crispy bacon wrapped around tender green beans with a sweet brown sugar glaze. This easy 30-minute side dish is a crowd-pleaser that disappears fast at any gathering.

  • 1 pound (450g) fresh green beans, trimmed
  • 12 ounces (340g) thin-cut bacon (about 12 slices), each cut in half crosswise
  • ΒΌ cup (50g) packed brown sugar (light or dark)
  • Β½ teaspoon (1.5g) garlic powder
  • Salt and black pepper to taste
  • ΒΌ teaspoon (0.5g) red pepper flakes (optional)

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Line a baking sheet with aluminum foil or parchment paper. Place a wire cooling rack on top if available.
  2. Rinse green beans under cold water and pat dry. Trim off the tough stem ends.
  3. In a small bowl, combine brown sugar, garlic powder, and a pinch of black pepper. Stir until evenly mixed.
  4. Gather 3 to 4 green beans into a small bundle. Wrap one half-slice of bacon around the middle, overlapping the ends slightly. Place seam-side down on the prepared baking sheet or rack. Repeat with remaining beans and bacon (about 24 bundles).
  5. Sprinkle the brown sugar mixture evenly over the tops of all bundles. Gently press the sugar into the bacon so it sticks.
  6. Bake for 15 minutes. The bacon will start to render fat and the sugar will bubble.
  7. Remove from oven. Using tongs, carefully flip each bundle. Spoon any pan juices over the bundles.
  8. Return to oven and bake for another 10 to 15 minutes, until bacon is crispy and sugar is deeply caramelized. Watch closely during the last 5 minutes to prevent burning.
  9. Let cool on the pan for 3 to 5 minutes before serving. Transfer to a platter and serve warm.

Notes

For extra richness, add 1 tablespoon melted butter to the brown sugar mixture. To keep bacon from unrolling, place bundles seam-side down. If using an air fryer, cook at 375Β°F (190Β°C) for 8 minutes, flip, then 5-7 minutes more. Make-ahead: assemble bundles up to 4 hours in advance, refrigerate, and add sugar coating just before baking.
