  • 1 cup (240 ml) whole milk, at room temperature
  • ½ tsp natural purple food coloring gel, varying intensities
  • ½ cup (120 ml) blackberry or blueberry puree, strained (optional)
  • 1 tbsp lemon juice
  • 8 oz (227 g) cream cheese, softened
  • ½ cup (113 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • Optional: a few drops of purple food coloring for frosting tint

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. In a medium bowl, whisk together sifted flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 4-5 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Alternate adding dry ingredients and milk: add one-third of dry mixture, then half the milk, mixing on low speed. Repeat until all incorporated. Do not overmix.
  6. Divide batter evenly into 4 bowls. Leave first bowl plain for lightest shade. Add a drop or two of purple gel food coloring to second bowl. Increase color intensity in third and fourth bowls, adding berry puree and more food coloring to the last for deepest purple.
  7. Pour a few spoonfuls of darkest purple batter into center of each cake pan, then add next lighter shade on top, continuing from darkest to lightest. Swirl gently with a skewer or butter knife to create galaxy ombré effect. Avoid over-swirl.
  8. Bake for 30-35 minutes. Check doneness with toothpick; it should come out with a few moist crumbs.
  9. Cool cakes in pans for 10 minutes, then transfer to cooling racks until completely cool.
  10. For frosting, beat cream cheese and softened butter until smooth and creamy. Gradually add powdered sugar, mixing well. Stir in vanilla and optional purple tint. Beat until light and fluffy.
  11. Level cakes if needed. Place one layer on serving plate, spread generous frosting layer, top with second cake. Apply thin crumb coat and chill 15 minutes.
  12. Finish with smooth layer of frosting and decorate as desired.

Notes

Use softened, room-temperature butter for best batter texture. Avoid over-swirling batter to prevent muddy colors. Chill cake after crumb coat for easier frosting application. Opening oven door frequently can cause cake to sink. For dairy-free version, substitute butter and cream cheese with plant-based alternatives and use almond or coconut milk.
