  • 6 large eggs, room temperature
  • 2 cups whole milk (can substitute almond milk for dairy-free)
  • ½ cup heavy cream (optional but recommended)
  • ⅓ cup granulated sugar
  • 2 tablespoons brown sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon freshly grated nutmeg (optional)
  • ¼ teaspoon salt
  • 2 tablespoons melted butter (for greasing and drizzling)
  • Powdered sugar for dusting (optional)

Instructions

  1. Grease a 9×13-inch baking dish with about 1 tablespoon of melted butter.
  2. Cube the day-old bread into roughly 1-inch pieces, keeping crusts on if desired.
  3. In a large mixing bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  4. Add the bread cubes to the custard mixture and gently stir to coat all pieces evenly. Press down lightly if bread looks dry.
  5. Pour the soaked bread and custard into the prepared baking dish and spread evenly.
  6. Drizzle the remaining melted butter (about 1 tablespoon) over the top.
  7. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
  8. Preheat oven to 350°F (175°C). Remove cover and bake uncovered for 45-55 minutes until the top is golden brown and custard is set but slightly jiggly in the center.
  9. Let the casserole rest for about 10 minutes before slicing. Dust with powdered sugar if desired and serve warm.

Notes

Use stale or day-old bread for best texture. Room temperature eggs and milk prevent custard separation. Do not soak longer than 24 hours to avoid sogginess. Tent with foil if top browns too quickly. Fresh bread can be toasted lightly before cubing if day-old bread is unavailable.
