  • 1 teaspoon lemon juice
  • Optional: 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until mixture resembles wet sand. Press firmly into the bottom of an 8×8-inch pan. Chill in the fridge for at least 10 minutes.
  2. Make the cheesecake layer: In a large bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  3. Whip the cream: In a separate bowl, beat cold heavy cream until soft peaks form.
  4. Fold the whipped cream into the cream cheese mixture gently to keep it light and airy.
  5. Spread the cheesecake layer evenly over the chilled crust. Smooth the surface and return to the fridge.
  6. Prepare the strawberry topping: Toss sliced strawberries with sugar and lemon juice. Let sit for 10 minutes to macerate. For thicker topping, stir in cornstarch slurry and microwave for 20-30 seconds, then cool.
  7. Spoon the strawberry topping evenly over the cheesecake layer. Cover with plastic wrap or foil and refrigerate for at least 3 hours or overnight.
  8. Slice and serve: Use a sharp knife dipped in hot water and dried between cuts to slice into squares.
