A quick and easy creamy street corn dip made with just three main ingredients, perfect for parties and casual get-togethers. This dip balances creamy richness with tangy brightness and a little kick.

Ingredients

Scale
  • 2 cups (about 300 grams) frozen or canned sweet corn, drained
  • 8 ounces (225 grams) cream cheese, softened (full-fat recommended)
  • 1/2 cup (120 ml) sour cream, preferably full-fat

Instructions

  1. Soften the cream cheese by leaving it at room temperature for about 30 minutes or microwaving in 10-second bursts until soft but not melted.
  2. If using frozen corn, thaw completely and drain excess moisture. For canned corn, drain thoroughly.
  3. In a medium bowl, mix the softened cream cheese and sour cream until smooth and creamy.
  4. Fold in the corn kernels gently, keeping some texture.
  5. Optionally, add a pinch of salt, pepper, chili powder or smoked paprika, and fresh chopped cilantro or green onions.
  6. Cover and chill the dip in the refrigerator for at least 30 minutes to let flavors meld and firm up.
  7. Serve cold or at room temperature with tortilla chips, crackers, or fresh veggies.

Notes

Soften cream cheese before mixing to avoid lumps. Drain corn thoroughly to prevent watery dip. Chill dip for at least 30 minutes for best flavor and texture. Stir in a teaspoon of milk or lime juice if dip is too thick after chilling. Avoid over-mixing corn to keep texture.
