  • 1 packet active dry yeast (2 1/4 tsp)
  • 3/4 cup warm water (110°F / 43°C)
  • 1/4 cup whole milk, warmed (60ml)
  • 1 large egg, room temperature
  • 2 tbsp unsalted butter, melted and slightly cooled
  • 1/2 tsp salt
  • Vegetable oil or peanut oil for frying
  • About 1 cup powdered sugar (120g) for dusting
  • 1 cup semi-sweet chocolate chips (170g)
  • 1/2 cup heavy cream (120ml)
  • 1 tsp vanilla extract

Instructions

  1. Activate the yeast: In a small bowl, combine warm water (110°F / 43°C), 1 tsp sugar (from total), and yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Mix dry ingredients: In a large bowl, whisk flour, remaining sugar, and salt together.
  3. Combine wet ingredients: In another bowl, whisk warm milk, melted butter, and egg until smooth.
  4. Make the dough: Pour yeast mixture and wet ingredients into dry ingredients. Stir with wooden spoon or stand mixer with dough hook on low speed until dough comes together, about 3-4 minutes.
  5. Knead the dough: Turn dough onto floured surface and knead by hand about 5 minutes until smooth and elastic. If using stand mixer, knead another 3 minutes. Dough should be slightly sticky but hold shape.
  6. Let it rise: Place dough in lightly greased bowl, cover, and let rise in warm spot for 1 to 1 ½ hours until doubled in size.
  7. Prepare frying setup: Pour oil into pot or fryer to depth of 2-3 inches. Heat to 350°F (175°C).
  8. Shape the beignet bites: Punch down dough, roll out to ½-inch thickness. Cut into 1-inch squares or rounds.
  9. Fry the bites: Drop 5-6 pieces at a time into hot oil. Fry 2-3 minutes, turning occasionally, until golden and puffed. Remove with slotted spoon and drain on wire rack lined with paper towels.
  10. Make the chocolate dip: Heat heavy cream in small saucepan until just simmering. Pour over chocolate chips in heatproof bowl. Let sit 2 minutes, then stir until smooth. Stir in vanilla extract.
  11. Serve: Dust beignet bites generously with powdered sugar and serve warm with chocolate dip.

Notes

Maintain oil temperature at 350°F (175°C) for best results. Fry in small batches to avoid overcrowding. Dust powdered sugar just before serving to prevent sogginess. Dough can be refrigerated overnight and brought to room temperature before frying. Leftover bites reheat well in a 350°F oven for 5-7 minutes. Chocolate dip can be gently reheated if thickened.
